Preserving foods was originally an essential way to store up food for the winter to avoid starvation for the family. In war-time, families were urged to grow vegetables and fruit and can them as a patriotic duty. Once canned goods became readily available again in a bewildering variety, canning became relegated to a hobby.
Nowadays, canning is once again in the spotlight as part of the green movement, a hands-on vote in support of local farmers and their produce, and a way to ensure you know exactly what is in the food you feed your family. There is a great satisfaction to be had in viewing rows of jewel-toned jams and colourful vegetables, chutneys and relishes on your pantry shelf. Home-canned favourites make great gifts!
