I love to make basic mixes for food. It saves time when you are in a hurry. You can blend the dry ingredients together, and then when you want to put together a smaller amount, you measure out just what you need to add to the liquid ingredients. When you are making some pancake snacks only for your toddler, this method is easy.

Combine Dry Ingredients to Make a Mix you can use by Adding Liquids.

make the Dry pancake mix

  • Dry Ingredients
  • 1 cup Buckwheat flour

  • 2 cups Gluten-Free Oat Flour (Processed in a facility without wheat)

  • 1 cup Chickpea Flour (also known as Garbanzo Beans)

  • 2 cups Arrowroot Flour

  • 4 tbsp. finely ground flax seeds

  • 4 tbsp. Baking Powder

  • 1/2 tsp. pink Himalayan Sea Salt

  • 1 tsp. Cinnamon – optional

  • Wet Ingredients
  • To be added to a small amount of Dry Mix as needed. See Directions.

  • Milk – or Milk Substitute

  • Egg – Optional

  • Vanilla – Pure – Optional

  • Avocado Oil or Melted Butter

  • Fresh Spinach, Blueberries, Banana, or other. A fun thing about these pancakes is that you can vary the fruit or veggies you add to make different kinds of pancakes.

  • Peanut or other Nut Butter – Optional

Directions

  • Use a Smoothy Maker.
  • Place Spinach, Blueberries, Banana, or other veggies and fruit in the container.
    (about 2/3 cup depending on the size of the container)
  • Add 1 tablespoon of oil or melted butter.
  • Peanut or Nut Butter – Optional
  • 1 tsp. Vanilla
  • 1 Egg – Optional
  • 1/2 cup of Milk or another Liquid Substitute (just enough to make a thick batter)
  • Smooth all together into a creamy liquid.
  • Add 1/3 cup of DRY PANCAKE MIX, plus a little more as needed to make a batter. Process again.
  • Heat a medium-hot skillet. Add a small amount of oil for frying. When the oil is hot, ladle small circles of batter into the pan and cook on one side until the tops bubble slightly. Turn over and cook on the other side until done. It takes about 3 to 4 minutes.
  • Serve plain or with a little fruit yogurt or maple syrup.

    A few nutritional notes:

    We all want our children to have the best nutrition so they will grow strong and healthy. You know that as a parent, you often juggle too many responsibilities. Time can run out on you. When my children were small, I found making a few healthy Dry Mixes ahead of time allowed me to mix up something in no time.

    Buckwheat is healthy for babies and packed with essential minerals like zinc, copper, magnesium, and manganese. Plus, it has iron and selenium too!

    Oat Flour contains all of the nutritional value of whole oats. It contains protein, calcium, iron, potassium, thiamin, and riboflavin. It is also a source of soluble fiber.

    Chickpea Flour contains a perfect ratio of protein and slow-burning carbohydrates that can regulate blood sugar levels, including manganese, folate, copper, phosphorus, iron, magnesium, zinc, potassium, thiamine, vitamin B6, selenium, vitamin K, and pantothenic acid; plus small amounts of vitamin A, C, E, and niacin. Chickpea flour has a more pungent taste and, for that reason, is good when used in a Mix.

    Arrowroot Flour is easily digestible. Arrowroot cookies have long been a favorite of moms to give their babies. Arrowroot contains a form of resistant starch and can help treat diarrhea or constipation. It also strengthens the immune system and red blood cell count. Arrowroot helps increase bone density too. It contains iron, phosphorus, folate, and potassium. Arrowroot flour helps to lighten baked goods and also pancakes. You are both adding functionality to your recipes and nutrition.

    Just a small amount of ground flax seed adds so much healthy goodness. Flax seeds contain polyunsaturated fatty acids, including Omega 3, dietary fiber, ALA (alpha-linolenic acid), fiber, and lignans. Lignans found in plants have an estrogenic balancing and anticancer effect.

    Adding blueberries, spinach, or other fruits or vegetables makes these pancakes extra good for little ones. You know, one for baby, one for me. If I were you, I would eat some of these too. Ha ha.

    Peanut Butter and various other types of Nut Butters are nutritious and add a tasty dimension to the results. You can make Peanut Butter pancakes with banana pieces inside. (Careful if you are unsure of any tree nut or peanut allergies.) So memorable.

    Once you make the Mix, these pancakes are easy enough for an older sibling to make. Teach your children to cook good foods starting early. They will appreciate it later. Did you know that in France, daycare centers serve food to train a child’s pallet? They want children to know what natural and unprocessed foods taste like. It makes sense to train a child’s tastebuds to appreciate good wholesome food when they are young.
